Popular Mexican restaurant just quietly opened new taco shop in Toronto

A Mexican restaurant that’s already been popular with people in Toronto has just quietly opened the doors of a new taco shop that’s nestled on a sleepy little street.

The official Instagram account page for Wilbur’s Taco Shop reads “Formerly known as Wilbur Mexicana,” which is the name of a Mexican restaurant that’s already been operating for years on bustling King West.

It now appears the brand is branching out with a new taco shop. The menu at the new spot consists of chips and dips, salads, tacos, burritos, bowls, quesadillas and fajitas.

Wilbur’s Taco Shop also has a ton of options for salads to accent your Mexican meal, with a wide range of heat levels from pico de gallo to ghost. The restaurant also isn’t afraid to colour outside the lines when it comes to the influences for its food, offering Korean bulgogi beef as a protein option.

You can order chips with guacamole, queso fundido or any salsa, and Wilbur’s Taco Shop serves a kale salad and a quinoa mixed greens salad that you can get topped with chicken, carne asada, pulled pork, bulgogi beef, Baja fish or shrimp.

As for tacos, Wilbur’s Taco Shop serves some more expected taco options including carnitas, carne asada, cochinita pibil and chicken tinga, but other options include the Korean bulgogi beef with pear, jicama slaw and sesame seeds and a cauliflower al pastor option that pairs roasted cauliflower with pineapple.

Burritos and bowls include a Cali option with steak, rice, cheese, guacamole, sweet potato fries, red salsa and sour cream, and a wholesome veggie option with quinoa, beans, mushrooms, peppers, onions, sweet potato fries, guacamole, cheese, pineapple salsa and chipotle crema.

For quesadillas, there’s a more typical option with cheese, peppers, onions and your choice of protein, but there’s also a version with chipotle shrimp and mushrooms. Fajitas are, of course, the usual sizzling skillet of your choice of protein served with flour tortillas, lettuce, guacamole and sour cream for that classic build-your-own experience.

Wilbur Mexicana has been operating on King Street West for years, and has been known for their burritos and other popular Mexican street food dishes. Now, the team is bringing their knowledge of delicious Mexican food to Liberty Village with this brand new location located down a sleepy side street in the industrial district of the city.

Wilbur’s Taco Shop is now open for business at 50 Atlantic Ave.
