Iconic neighbourhood ‘night’ bakery closes flagship store in Toronto

One of Toronto’s most cherished bakeries is shutting down its flagship store.

The Night Baker — a familiar sight for those with a sweet tooth in Toronto — has been one of the city’s most beloved stops for sweet treats, having since expanded to several locations since opening.

Launched by husband-and-wife team Mitchell Cabrera and Leanne Cabrera, this flour-stained fairy tale has been a local favourite since their first store opened on College St. in 2019, which has since become iconic for takes on dessert classics infused with Filipino flavours.

However, the Cabreras took to Instagram over the weekend to reveal that they are selling their original location at 825 College St.

In a Q&A post, they clarified that this decision does not mean that the other Night Baker locations — in North York and on the Danforth — are closing.

This decision, in a rare turn of events, is not due to financial strain as so many recent closures in Toronto have been, but instead has come from parental priorities.

“After two years, we found that having three stores was not sustainable for us while raising our baby boy,” said the Cabreras in their post. “No, it wasn’t a personal financial decision but a personal one: chose happiness, y’know?”

The post further stated that the family-run business wants to stay that way, so for the time being, the Cabreras are choosing not to franchise, which, as a result, has led to the keys to the College St. location now being handed to “another bakery,” according to the post.

The flashship Night Baker location is set to have its last day this week on July 29, at 825 College St.

While no word has been supplied on what is set to replace it, the Cabreras stated loud and clear that “Our soon-to-be old neighbourhood will be in good hands.”
